Love Pickles, Spice, and the Great Outdoors? This Recipe Is for You!

Anyone who knows me knows of my love for pickles and trees. So, I combined them! The amount of deliciousness they provide cannot be described in mere mortal words, lol.

Solar Power Health Spicy Evergreen Forest Pickles

Ingredients

  • 1 English cucumber, sliced
  • 2 jalapeño, sliced
  • 1/4 cup fresh dill
  • 3 bay leaves
  • 4 garlic cloves, smashed with peels
  • 1/2 cup small evergreen tree branches/needles (pine, cedar, spruce, balsam, cypress or Tsuga hemlock—just make sure it’s Tsuga hemlock as some hemlock is very toxic!)
  • 3 tbsp Himalayan rock salt
  • 1/2 cup white vinegar
  • filtered water

Directions

Add all ingredients to your 1 litre mason jar.

Fill with water to cover.

Let sit for a day. Shake regularly.

They just get better with age and are good for a month or so in the fridge.
